Enchilada Recipe and Review of Cooking with Beans by Rhiana Jones

We've been trying to eat more beans at our house for a few reason 1. They are usually inexpensive to buy 2. They store a long time and 3. They have a lot of protein in them compared to how much they cost (vs buying meat). I like adding beans to my enchiladas as a filler so that I don't have to use as much meat.

Here is a recipe that I adapted using the Black Bean Enchilada Recipe from Cooking with Beans by Rhiana Jones.

Zucchini Bread and Muffins Recipe

I love zucchini muffins and bread. Every fall we have more zucchini than I know what to do with (This picture is of a gigantic zucchini we found growing in our garden), so I grate it, put 2 cups in each ziplock bag, and freeze it. I also make 5 or 6 batches of bread and muffins using this recipe and freeze them for quick on the go snacks. I got this recipe from my mom who got it from her mom. Its well loved, used often, and always turns out. I changed a few things - like using part whole wheat flour and part white flour, and using coconut oil. But if you want you can use all white sugar and all liquid oil, it's up to you :)

Homemade Popsicles

My toddler loves popsicles - his mama however is not a fan of all the nasty things the food industry makes popsicles out of (artificial colors, artificial flavors, one time use plastic, etc) or the price of the more natural ones. We we decided to make our own! I honestly think homemade popsicles are one of the easiest things to start making at home; there are so many options and you don't have to have recipes to make them - just throw together anything you have available. The following are some of the things that we have tried. I just did everything to taste, I figured popsicles didn't need to be an exact science.

Mung Bean Cheddar Wedges Recipe/Feeding Baby Book Review and Giveaway

As some of you may know, I love making my own baby food. I made all the baby food that my first child ate and I plan on doing the same with my second once she is old enough. My first baby (he's now almost three) wouldn't even eat the store bought baby food, once when we were out an about I totally spaced bringing his homemade food with us so I stopped and bought a few jars of fruit and he wouldn't even eat them. Then I tasted one - hmm there was definitely a reason he didn't like that stuff, it did not taste good at all.

DIY Flatulence Herbal Tea Blend Recipe

Our newborn gets horrible gas and it doesn't seem to matter what I eat or don't eat, she still gets it. I created this tea blend in hopes to help her tummy and it is working - she still has a little gas, but she doesn't scream out in pain because of it. Since she is so young (she is 6 weeks old), I don't give it to her directly, but instead I drink about a quart of it per day and she gets what she needs through my breastmilk. It has a pleasant taste (my toddler loves to drink it); although my favorite way to drink it is infuse 1 tablespoon of the Flatulence Tea Blend and 1 tablespoon of my Herbal Pregnancy Tea Blend in a quart of water over night. I love the peppermint taste of the pregnancy blend mixed with the seeds and chamomile of the Flatulence Tea.

Muslin Swaddle Blankets

As some of you know we had a new baby in July. She is a good baby, as long as she is swaddled and the perfect temperature. I never used muslin swaddle blankets with my first child, he was born in the fall when the whether is chilly so we just bought stretchy thermal blankets and used them to swaddle him. However, with this second baby I wanted something lighter weight since she was born in the middle of summer. We've tried four different brands of swaddle blankets - Aden + Anais, Summer, Lambie and Me, and we have one no name blanket that I purchased from a Co-Op.
